| Ok, I resolved my issue and I'm sorry for wasting time (however it may help someone else)
The issue appeared to be leftovers. They must have been growing mold or something because I wiped out the shib-dist and re-unzipped, and all built just fine.
JAVA_HOME=/opt/java/'jdk1.5.xpath'

That is when I get the error like I have before about 'dist' not being available. (sorry, I did not make that super clear in the email below).
It also appears that ant didn't really push any debug stuff out. I'm trying to play around with it and look at the ant.sh to see if I can get some more info...

Also, you aren't using the system install ant version, the ant script we ship with shibboleth uses a version of ant that we ship with. It's just a standard ant version but with some extension ant tasks already loaded so that deployers don't have to figure out how to do that.
