Here is what I can gather by looking in at my shibboleth email archive:
Shib Alpha 1 - April 2002
Shib Alpha 2 - July 2002
Shib Alpha 2.5 - August 2002
Shib 0.7 (aka Beta1) - November 2002
Shib 0.8 - March 2003
Shib 1.0 June 2003
Shib 1.1 August 2003
Shib 1.2 June 2004
I can probably get exact dates if you want, but some of the earlier ones will be sketchy at best since those were not really officially announced as far as I can tell.
