My $.02.. not sure about video conferencing but in video studios red is way too strong. and if you ever have to go to a composite signal will bleed a lot.
I would say if you use red desaturate it considerably and run some tests with your cameras, including final compressions..

White is also bad as if considerable it can cause auto irises to close and make foreground darker. And can peak some sensors.
Maybe use a very light gray instead of white?

Above from production video studios.. not videoconferencing.... but video may be video... and just my personal observations.
