Benn, what color scheme do you want for the demo and are we going to demo a quick theme swap?  I'd like to use the basic Smoothness theme as the default and then if you have different themes installed, you can show that it's a one-liner to change between them.

The color scheme can be created by going here to pick some colors:

and then putting the CSS files it generates here:

app/webroot/js/jquery/ui/css

Then add a line to View/Layouts/default.ctp to include the css file or modify the existing line:
