This turned out to be very easy to configure (once I was pointing at an ldap server that could actually do authN).

Mind sharing what exactly the problem was?
For several years now, I've run a test Shib IdP, pulling attributes from our QA ldap server (but doing authN separately).
I had configured my Shib 2 install to use that same server. It turns out that ldap server CANNOT do authn (our passwords are stored in Kerberos; *some* of our ldap servers contain the kerberos plugin; it turns out the server I've been using as an attribute store does not contain the required plugin).
Once I was told which server to use... everything worked fine....
Sorry for the false alarm.....
