One thing, though - many of them are announcements for streams that use admin scoped groups, and therefore you won't be able to see any traffic on them. These announcements are for public streams that are typically reliable:

CPAC
HEAnet - HD Webcam
Holy See
Immersion (doesn't always have live video)
IPTV ZU
LavaNet
Monoskop (test pattern when off the air)
Monterey (sometimes has camera problems, or so it appears)
National Research Council Canada/NRC
NTUA ERT World
TA3
Trondheim Underground Radio
UCTV
Universite Louis Pasteur France/UTV
University of Bergen

There are sometimes others for special events, but that list is where I look when I need a test signal or a demo. And if your machine can handle HD, you can also try two streams that don't have SAP announcements: 233.0.73.26/1234 and 233.0.59.4/8000.
