That's Ok - you can still use rtp/rtcp-based clients to measure jitter for
unicast traffic. As long as the client returns meaningful jitter numbers,
which I'm not always convinced about. iperf is a nice tool, and I'd trust it
more :-)

If you're doing videoconf test, are you using H.323 clients? Many of them
(e.g. the ViaVideo) report rtp-traffic jitter in their 'stats' windows.

I can't check right now - does vic do graphs of jitter? It graphs pretty much
everything else. It may vary between the openmash and ucl versions of vic.
Just run vic in unicast mode.
