OK, No LDAP I work with supports sorting.  I hear maybe some soon to be released version might thought.

LDAP DSAs are capable of server side sorting. Not all versions of ldapsearch or its equivalents support server side sorting. The server look through limit is going to restrict the number of records included in the sort though. I do not know if the records returned limit will return the top x records in the sort or just sort the first x records that match the query.

To demonstrate this capability, this webpage allows searching the USC directory and uses the server side sort capability when formatting the results. <http://its.usc.edu/~bbellina/gds/search/adv_search.html>. You can sort the results by title, phone, or email address. There is a bug preventing sorting by the department column.  If you want to test this using your own school's LDAP directory you can use this page <http://eds.nd.edu/search/ldap_search.shtml> as long as your directory can be searched from outside your IP space without requiring SSL and populates the standard LDAP attributes.
